A better meatball



I made up a fun new recipe for meatballs!  Bebe B liked them, which was a huge surprise because she is very picky when it comes to meat.  Here is the recipe:

About a pound of lean ground turkey
1/2 cup sweet potato puree
1 cup whole wheat bread crumbs
1 egg yolk
2 finely chopped shallots (scallions would work also)
1 small finely diced tomato
1 small garlic clove minced
parsley, paprika, rosemary, salt & pepper to taste

Mix everything together in a bowl with your hands then form little meatballs.  Cook in a deep pan on medium heat.  I use a very small amount of olive oil in the pan and keep turning the meatballs every few minutes to help them cook evenly.
