Last week I had the opportunity to cater the dessert for our Madison Mom's Blog Mom's Night Out event at Fleet Feet Sports here in Madison, WI.  I wanted to make treats that would be easy for guests to grab and eat in a bite or two.  Plus {you know me} I wanted them to be crazy delicious and crazy healthy.

Chocolate Cashew Spread

A fun treat for sandwiches or dipping fruit is chocolate spread. Unlike commercial, store bought brands this recipe doesn't contain any artificial ingredients. My daughters love it when they find it in their lunchbox or we make to dip strawberries in! Plus cashews make the spread super creamy ps. cashews are loaded with minerals like potassium, copper, iron, magnesiumzinc, and selenium.

Vanilla Fruit Salad

In our house fruit salad often is simply a bowl. Sometimes though we like to get a little creative. I love this recipe because it's easy yet adds another level. Plus the combination of vanilla, citrus and berries is divine. Children love helping to make this recipe and it's a wonderful sensory experience for them {make sure to let them touch and smell the vanilla beans}.

Yogurt Berry Bites

This is a fun and easy recipe for a frozen treat.  Let them thaw for a few minutes before serving to make them a little easier to eat. It's also great to pack in a lunch.  After some testing we have discovered if you put them in the lunchbox from the freezer in the morning they still hold their shape and are cold at lunchtime.  I send a spoon because Bébé B has said they get a little mushy and are easier to eat with a spoon.  They are healthier than any store bought frozen treat and more affordable too, with only three ingredients!

Apple Nachos
