Gingerbread Latté

This year I have become obsessed with gingerbread! I taught a couple gingerbread classes where we made gingerbread dip, toast and smoothies.  I love all things ginger and all things coffee so this recipe is a win-win! You can also make kid versions by substituting cocoa for coffee...

Pistachio Cherry Bark

I love how easy this recipe makes a great treat to take to a party or make for a friend.  Plus when you make it yourself you can control the ingredients you use. I often make Peppermint Bark version which is identical to this recipe only I sprinkle crushed Hammond’s or TruJoy Sweets candy cane over the bark instead of the pistachios and cherries. Perfect to make for the Holidays!

Pecan Pumpkin Muffins {GF}

For the last few years I have been playing around with and testing gluten-free pumpkin muffin recipes with mixed results.  Either the results were less than great or the recipe was too complicated.  I am happy to say I have cracked the code and these gluten-free pumpkin muffins are awesome and so easy to make that I have been making them almost every week since September.  My family loves them - even my gluten loving husband and kids! To make them nut-free use coconut flour instead of nut flour and omit the pecans or substitute pumpkin seeds...

Harvest Cranberry Dip

If your family is anything like mine than your plan of enjoying Thanksgiving dinner around noon turns into three or four pm. Somehow no matter who is hosting; my parents, siblings or my husband and I, we never start the meal in a timely fashion. There’s always one more side dish to go in the oven or someone shows up with rolls that still need baking or we forget the mashed potatoes and my sister would rather jump back on a boat to the old world than celebrate a mashed potatoless Thanksgiving.
I created this recipe years ago as a healthy appetizer for pre-dinner snacking. Perfectly light so you don’t get stuffed before you can have stuffing! I have been making it so long I have never even written it down…until now. You can thank me later. This is also a wonderful recipe to make after Thanksgiving and use up all your leftover cranberry sauce...

Autumn Flatbread

This is my new favorite recipe. At our house we have pizza about a gazillion times a year (I'm only slightly exaggerating). I love being able to try new twists and variations. This savory use of pumpkin is warm and yummy, a spot on flavor combination. My culinary students loved using this sauce last month, it was a huge hit!

Pumpkin Mac

This is a great autumn twist on the classic dish of macaroni and cheese.  The best part of this recipe is the pumpkin adds such a creamy texture you won't even miss the dairy if you make it dairy-free, which I do.  My five year old would likely have mac and cheese for breakfast, lunch and dinner if allowed so she's a pretty tough critic of alterations to the classic. Yet she gave this recipe a thumbs up so you can trust it delivers...

Caramel Pumpkin Granola

It’s October, going on November and we are still all about those Pumpkins! I know some people get pumpkin'ed out but not me or my crew. Pumpkin forever (okay till mid-December at least). Here is one of my favorite recipes using pumpkin. It’s a great recipe to have the kid’s help you with – they love whisking and mixing! This makes the perfect addition to yogurt or a bowl of fruit. It make a great snack or post-workout treat. Did I mention it makes a fun little crunch topping for your pumpkin pie (might come in handy next month)...

Maple Roast Chickpeas

Protein is essential for our bodies.  In fact, excluding water, 3/4 of our bodies are made up of proteins and are found in every cell (muscles, organs, some hormones, and certain antibodies and enzymes).  We need protein {the building blocks of our cells} from a variety of sources to help our bodies heal.  Protein also provides us with energy and helps the neurotransmitters in our brains function.  Overall it’s pretty darn important.  I love this recipe because it can be tricky to find snacks that contain much protein.  But this recipe delivers…on protein…and taste.  A crunchy, sweet and protein-packed little snack perfect for adults and kids alike...

Carrot Jam

Hello my name is Tara and I love jam. There, I said it.  I seriously cannot get enough of homemade jam.

Carrots are a wonderful, almost always available fresh vegetable so this makes a great jam in most seasons. I made this recipe this weekend for our Yummy Sprout booth at the Madison Moms Blog Eggstravaganza with ingredients graciously provided by our local Whole Foods Market. I had quite a few people loving this jam on top of rice crackers with a bit of fresh carrot shreds on top, mmm just like carrot cake.

Farm Salad...Is is Summer Yet?

I am participating once again in the Wisconsin Whisk "all whisked up". A chance to make and share a recipe from another Whisk member. This month I was assigned the blog Wisconsin Fun Next Exit. The author Erica chronicles her food, travel and life adventures at her simple and chic space of the internet. Currently I'm dreaming of spring which melts into the long days of summer, soup and stew recipes...I'm kind of over you right now. I decided on a recipe Erica shared a few summers back when she worked on a farm in exchange for fresh veggies (sounds like a fun trade to me). I had to make a few changes because well it's February still here in Wisconsin but I tried to stay true to her recipe.  I love the homemade dressing...tangy and balances the greens well!

PB & J Smoothie

This a fun, easy and DELICIOUS recipe! It’s like a sandwich in smoothie form. Kid’s love to help making it almost as much as they love drinking it. It is always a big hit in my Cooking Classes for Kids. A healthy treat, perfect for breakfast, snack or pretty much anytime of day. I have also made a nut free version using sunflower butter and it was just as good.
