I think this pudding recipe may just have topped my cinnamon chia pudding for first place in my heart! This one is rich, creamy and loaded with healthy goodness...
Blueberry Bliss Chia Pudding
1 cup Blueberries, fresh or frozen thawed
1 1/2 cups full-fat Coconut Milk (I like this one because it has no extra ingredients)
1/2 cup pure Maple Syrup
2 tbsp Cashew Butter (any nut or seed butter will work)
1/4 tsp Cinnamon
3/4 cup Chia Seed
Blend up the blueberries, coconut milk, syrup, cashew butter and cinnamon in a blender until smooth. Add the mixture to a large bowl with an airtight lid. Whisk in chia seed till well combined. Cover with the lid and refrigerate at least 15 minutes before serving. Makes a great breakfast, treat or snack. Top with fresh berries or granola if desired.
