Raspberry Coconut Bars {no-bake}


This is an easy, healthy and allergy-friendly treat. It's bright color is matched only by it's fruity and sweet taste (in fact I dare you to eat just one).  Great for parties, snacks, lunch boxes and mores...

Raspberry Coconut Bars
Ingredients:
2 cups Coconut, unsweetened shredded
3/4 cup freeze-dried Raspberries
1/2 cup pure Maple Syrup
3 tbsp Coconut Oil
pinch Salt
1/8 tsp Nutmeg
1 tsp pure Vanilla

Add all of the ingredients to a food processor and blend till smooth (about 3-5 minutes).  Spread evenly on a parchment lined baking pan.  Set in the freezer for 30 minutes.  Cut into bars and store in an airtight container in the fridge or freezer.
