Spicy-Peanut Cauliflower Lettuce Wraps


This is an easy and healthy recipe for a light dinner or a fantastic appetizer for a party. Roasted cauliflower can be a little plain so I love the way this jazzes and (quite literally) spices the mild vegetable up. Perfect for vegetarians and meat-lovers alike...


Spicy-Peanut Cauliflower Lettuce Wraps
Ingredients:
1/2 head Cauliflower, washed and chopped
1/2 cup Peanut Butter
1 TBSP Tomato Paste
1 clove Garlic
1/4 tsp ground Chili Pepper or Cayenne Pepper (depending on desired heat level)
1/4 tsp Turmeric
1/8 tsp Cumin
1/8 tsp Nutmeg
Salt to taste
1 medium Tomatoes, diced
8-10 large Lettuce Leaves (butter lettuce or romaine work well)
1/4 cup chopped Peanuts, optional

Preheat the oven to 375 degrees(f).  Line a baking sheet with parchment.  In a large bowl whisk together peanut butter, tomato paste, spices and salt.  Toss cauliflower in mixture till well coated.  Spread out on baking sheet and add garlic clove. Roast for 10-15 minutes staring half way through. Remove garlic clove before serving (or if you prefer dice the roasted garlic and mix it into the cauliflower). Serve warm with crisp lettuce leaves, top with tomatoes and peanuts, if desired.
