Kale, Spinach & Nana (7 Months+)

This is one of my puree came about after I picked up a beautiful bunch of spinach and kale from the Farmer’s Market and had a bunch of bananas ripe and getting riper by the second staring me in the eye. It has, by far, a favorite.

If your interested (or know someone interested) in learning more about making your own baby food, I have a class coming up on July 29th, 2012: Adventures in Baby Food Making.

Kale, Spinach & Nana Puree - 7 Months+

Ingredients:

1 small bunch Kale

3-4 cups fresh Spinach

2 ripe Bananas

1/2 tsp nutmeg

Wash the kale and spinach leaves. Rough shop the kale to manageable size pieces. Steam the kale and spinach in either a steaming basket on the stove or in a baby-food maker. Use about 2-3 inches of water and steam for about 5 minutes. Add the Nutmeg to the kale and spinach as they are steaming (or before). Set the kale and spinach in the refrigerator once they are done steaming to avoid over-cooking and to cool them down a touch before pureeing (about 5-10 minutes). Discard the cooking liquid. Puree the kale, spinach and banana until smooth. Additional water may be needed to reach desired consistency. This recipe will keep up to 3 days in the fridge or 3 months in the freezer. This recipe will fill about 3 ice cube trays (15-30 servings), or 4-6 small jars.
