Almond & Chive Cornbread {GF}



This is hands-down the best, best cornbread. Ever! It's rich with a sweet and savory combo that melts in your mouth. The prefect accompaniment to any soup, stew or chili. We love it with our White Bean Chili.


Almond & Chive Corn Bread {GF}

Ingredients:

1 cup Almond Flour

1 cup Yellow Cornmeal

1 tbsp Ground Flax Seed

1/2 tsp Baking Powder

1/4 tsp Sea Salt

1/2 cup full fat Coconut Milk

1/2 cup vegan Half & Half (We use THIS)

1/2 cup Butter or Earth Balance (non-hydrogenated vegetable spread), melted

1/3 cup Honey

2 large Eggs

1/4 cup fresh Chives, cut with kitchen scissors into small pieces


Preheat oven to 375(f) degrees.  Line a bread pan with parchment or grease with coconut oil. Whisk together flour, cornmeal, flax, baking powder and salt in a large bowl.  In a medium bowl whisk together milk, butter, honey till smooth and honey is dissolved.  Add eggs and whisk till smooth.  Whisk the wet into the dry ingredients just until combined (don't over-mix). Fill the pan with batter, sprinkle with chives and swirl in with a fork. Bake for 20-25 minutes. Allow to cool, serve warm!
