
This is hands-down the best, best cornbread. Ever! It's rich with a sweet and savory combo that melts in your mouth. The prefect accompaniment to any soup, stew or chili. We love it with our White Bean Chili.
Almond & Chive Corn Bread {GF}
Ingredients:
1 cup Almond Flour
1 cup Yellow Cornmeal
1 tbsp Ground Flax Seed
1/2 tsp Baking Powder
1/4 tsp Sea Salt
1/2 cup full fat Coconut Milk
1/2 cup vegan Half & Half (We use THIS)
1/2 cup Butter or Earth Balance (non-hydrogenated vegetable spread), melted
1/3 cup Honey
2 large Eggs
1/4 cup fresh Chives, cut with kitchen scissors into small pieces
Preheat oven to 375(f) degrees. Â Line a bread pan with parchment or grease with coconut oil. Whisk together flour, cornmeal, flax, baking powder and salt in a large bowl. Â In a medium bowl whisk together milk, butter, honey till smooth and honey is dissolved. Â Add eggs and whisk till smooth. Â Whisk the wet into the dry ingredients just until combined (don't over-mix). Fill the pan with batter, sprinkle with chives and swirl in with a fork. Bake for 20-25 minutes. Allow to cool, serve warm!
