We love the tasty combination of coconut and banana in this muffin. Â It's a light and sweet muffin that even the strongest of spinach hater would adore. Â The girls have already requested them twice in the last few weeks. Sweetened with honey and packing the protein and fiber punch of coconut flour they are a nutrition powerhouse...
Banana Spinach Muffins
Ingredients:
1 cup fresh Spinach
2 RIPE Bananas
1/2 cup Coconut Flour
3 Eggs
2 tbsp Honey
1 tsp Baking powder
Preheat oven to 350 degrees(f). Line a muffin or mini muffin pan with paper liners (or grease well with coconut oil). Â Blend all of the ingredients except the baking powder in the blender till smooth. Â Add the baking powder and blend just till mixed in. Â Fill cups about 3/4 full. Â Bake for 15-20 minutes. Â Allow to cool. Â Store leftovers in an airtight container in the fridge. Â Makes about 10-12 muffins or 24 mini muffins.Â
